Mulligatawny. It is a classic Anglo-Indian dish with roots in South India. Originally a thin, spicy sauce or broth, the recipe was adapted by the British to become a heartier, more substantial soup that suited their tastes. This fusion, which typically includes British ingredients like meat, vegetables, and apples alongside Indian spices, lentils, and sometimes rice and coconut milk.
Pozole (or posole). It is a traditional, hearty Mexican stew made from hominy (large corn kernels) and meat (usually pork or chicken), simmered in a flavorful chile-based broth.
Pepián. It is a thick, rich stew. It is characterized by its velvety sauce (recado) made from a unique blend of roasted seeds, dried chilies, and charred vegetables, which gives it a distinctive smoky and nutty flavor.
Sopa de Res (beef soup). It is a hearty and comforting stew packed with tender beef and various vegetables like cabbage, corn, chayote, and yuca.
Sopa de Caracol (conch soup). It is a traditional and highly celebrated dish, primarily originating from the coastal regions of Honduras. It is known for its rich, creamy broth, tender conch meat, and a vibrant blend of vegetables and spices, often including coconut milk and yuca (cassava).
Mondongo. It is a soup or broth made with beef tripe (mondongo), slowly cooked along with a variety of local vegetables and root crops such as yuca, quequisque, malanga, and cabbage, as well as chiltoma, onion, garlic, and young corn.
Miso soup. It is a traditional Japanese soup that has a rich, savory umami flavor. Typically consists of a dashi (soup stock) mixed with miso paste and various ingredients such as tofu, seaweed, and green onions.
Pho. Consists of a fragrant broth, flat rice noodles, and meat (usually beef or chicken). It is often served with a side of fresh herbs, bean sprouts, lime, and chili for customization.
Tom Yum. It is a Thai hot and sour soup made with a broth flavored with lemongrass, galangal, and kaffir lime leaves, chili peppers, and lime juice. It often includes a protein like shrimp or chicken, mushrooms, tomatoes, and is finished with fish sauce and fresh cilantro.
Hot and Sour Soup. A classic with a balanced flavor profile of spicy and sour, often made with mushrooms, tofu, and pork. It gets its heat from white pepper, not chili peppers, and its sourness from vinegar.
