⭐️ Mole Poblano (is perhaps the best known of all mole varieties. An ancient dish native to the state of Puebla, it has been called the national dish of Mexico, and ranked first as the most typical of Mexican dishes).

⭐️ Mexican Birria (Birria is a Mexican stew made from meat (usually either goat or lamb) that has been seasoned and braised to perfection. The stew can also include dried chilis, lime, and Mexican oregano and cinnamon).

⭐️ Pozole (This traditional soup is made with hominy, meat and spices. It’s often garnished with shredded cabbage, radishes and lime wedges, making for a hearty and flavourful dish).

⭐️ Cochinita Pibil (also puerco pibil or cochinita con achiote) is a traditional Yucatec Mayan slow-roasted pork dish from the Yucatán Peninsula. Preparation of traditional cochinita involves marinating the meat in strongly acidic citrus juice, adding annatto seed, which imparts a vivid burnt orange color, and roasting the meat in a píib while it is wrapped in banana leaf).

⭐️ Vigorón (Is a traditional Nicaraguan dish. It consists of a cabbage salad (chopped cabbage, tomatoes, onions, and chili pepper marinated in vinegar and salt), boiled yuca, and chicharrones (fried pork belly or fried pork rinds), all wrapped in a banana leaf) boiled cassava, curtido and chicharrones (deep-fried pork rinds).
